Waldorf Salad

Several recipes have become so popular they’ve been handed down from one generation to the next. One such recipe, The Waldorf Salad, has been around for a century and many consider it a mainstay dish for the Thanksgiving and Christmas Holidays.

The Waldorf salad was invented about the year 1895 by Oscar Tschirky, the maitre d’ of the Waldorf-Astoria Hotel located in the U.S. in New York City. He created new recipes for the restaurant menu. In 1896, a cook-book written by him appeared entitled The Cook Book by Oscar of the Waldorf. The cook book contained the recipe for Waldorf salad.

A second cook book appeared in 1938 and the salad gained popularity right away. It was even included in a song by Cole Porter in 1934 entitled You’re The Top .

Yogurt can be used in place of mayonnaise and some people add chicken or turkey. For the Emerald salad, cauliflower is used instead of celery. Adding herbs is optional as is oranges and lemons.

Recipe for Waldorf Salad:

3 cps diced Red Delicious apples, leaving peel for color
¾ cp diced celery
¾ cp pecan, walnut or almond pieces
1½ cps seedless grapes, halved

Dressing:
2/3 cp of mayonnaise (or 1/2 yogurt and 1/2 mayo)
1 Tbs sugar
Combine and chill until ready to serve.

Customarily served during the holidays, Waldorf Salad is a famous and popular side dish that adds an exquisite touch to any meal.
